Keto French Dip Chaffle Sandwich

One way to make following the ketogenic diet more accessible is to explore different recipes, so you don’t get bored. Now that chaffles have hit the keto world like a storm, it has opened many new food options.

As I brainstormed chaffle recipes this week, I thought about one of my favorite sandwiches I have missed since I started eating keto. I knew there had to be a way to make a Low Carb French Dip Sandwich using chaffles for bread. I was right! This Open Faced Keto Chaffle Sandwich turned out fantastic.

What is a Chaffle Sandwich Recipe?

Perhaps you’ve not heard of the chaffles sensation that went viral overnight? If so, the basic recipe is eggs and cheese made into a crunchy cheese waffle with the Dash Mini Waffle Maker. You can also use a regular waffle iron, but the amount of batter and cooking time may need to be adjusted. Since it was first introduced, the keto world has gone crazy, making chaffles of every variety, both sweet and savory; some are even chaffles without the cheese. This recipe is a twist on the standard chaffle recipe that I find a bit crispier and doesn’t taste like eggs.

What is a French Dip Chaffle Sandwich?

Traditional French Dip sandwiches consist of thinly sliced roast beef and melted swiss cheese served on a white sub roll with au jus on the side for dipping. While this sandwich isn’t exactly a traditional French Dip recipe, it is fantastic and easy to make a keto-friendly alternative. Instead of using a carb-laden white sub roll, I substituted a keto chaffle for a deiliocus low-carb crispy bread.

What Beef Did You Use in this Chaffle Sandwich Keto Recipe?

I am a fan of leftovers. With a family of six and a homeschool mom, we eat at home a lot. So that I am not always in the kitchen, I often make extra at dinner, so we have lunch covered for at least the next day. With that in mind, we love slow cooker Keto Pot Roast and enjoy it at least once or twice a month. It’s always nice to repurpose leftovers so that we don’t feel like we aren’t eating the same food the next day. We are turning leftover pot roast into an open-faced low carb French Dip Sandwich made for an incredibly delicious and filling lunch.

First, make two chaffles by following the recipe card at the bottom of this post. I used a combination of mozzarella and cheddar cheeses so that the cheddar wouldn’t overwhelm the roast beef and melted cheese in this chaffle sandwich keto recipe.

Before adding the pot roast on top of the chaffle bread, I made sure to drain it a bit so that the gravy/broth didn’t make the chaffle soggy. You’ll want crunchy bread for this recipe.

 

While a traditional French Dip sandwich uses swiss cheese, I only had provolone cheese on hand and loved the substitution. Place it on a baking sheet and bake until the cheese has browned.

I decided to make this Keto French Dip Chaffle Sandwich open-faced as it is incredibly hearty and filling. Indeed, comfort food is at its best.

Can I Use a Regular Waffle Maker?

You can, but I have found that the dash waffle maker works best for the crispest chaffles since the grates on the iron are smaller and closer together.

How to Make an Open-Faced Keto French Dip Sandwich

  1. Follow the keto chaffle recipe below on the recipe card
  2. Preheat the oven to 425 degrees. Add 1/3 cup Keto Roast Beef to the top of each chaffle for an open-faced sandwich (I made sure to drain excess broth)
  3. After you add beef, place a slice of deli cheese or shredded cheese on top. (Swiss cheese or Provolone work great)
  4. Place chaffles with meat and cheese in the oven on the top rack to melt the cheese
  5. Serve with a small bowl of beef broth on the side for dipping.
  6. Optional: Some enjoy adding horseradish or mayo to their keto roast beef sandwich.

Yum! This was a fun way to enjoy leftover pot roast and a lovely variation of the traditional chaffle recipe.

  • Substitute 1 TB almond flour instead of 1 tsp coconut flour
  • Experiment with different kinds of cheeses
  • Add additional spices to the chaffle, such as onion powder, garlic,

Meat Mixture:

  • Sautee a sliced onion and green bell pepper to add to the keto french dip sandwich
  • Sautee the leftover roast beef in a pan first with fresh minced garlic cloves. Add a splash of Worcestershire sauce and soy sauce for added flavor.

I poured a little beef broth into a small bowl for dipping, then warmed it up a bit. It was a fantastic accompaniment to this mouthwateringly delicious keto chaffle sandwich.

Can I Make This Easy Keto Recipe Ahead of Time?

You can make chaffles ahead of time. They can be stored in the fridge in an airtight container for up to 5 days or in the freezer for up to 3 months. I suggest not rewarming the chaffle in the microwave as it would lose its crispness from steam. Instead, wrap chaffles in aluminum foil and rewarm in the oven or pop them in the air fryer or toaster.

  • 1 egg white
  • 1/4 cup mozzarella cheese, shredded (packed)
  • 1/4 cup sharp cheddar cheese, shredded (packed)
  • 3/4 tsp water
  • 1 tsp coconut flour
  • 1/4 tsp baking powder
  • pinch of salt
  • Preheat the oven to 425 degrees. Plug the Dash Mini Waffle Maker in the wall and grease lightly once it is hot.

  • Combine all of the ingredients in a bowl and stir to combine.

  • Spoon 1/2 of the batter on the waffle maker and close the lid. Set a timer for 4 minutes, and do not lift the top until the cooking time is complete. Lifting beforehand can cause the Chaffle keto sandwich recipe to separate and stick to the waffle iron. It is essential to let it cook for the entire 4 minutes before lifting the lid.

  • Remove the chaffle from the waffle iron and set it aside. Repeat the same steps above with the rest of the chaffle batter.

  • Cover a cookie sheet with parchment paper and place chaffles a few inches apart.

  • Add 1/4 to 1/3 cup of the slow cooker keto roast beef from the following recipe. Drain the excess broth/gravy before adding it to the top of the chaffle. (slow cooker Keto Pot Roast recipe here or Instant Pot Keto Pot Roast recipe here)
  • Add a slice of deli cheese or shredded cheese on top. Swiss and provolone are both great options.

  • Place on the top rack of the oven for 5 minutes so that the cheese can melt. If you’d like the cheese to bubble and begin to brown, turn the oven to broil for 1 min. (The swiss cheese may not brown)

  • Enjoy open-faced with a small bowl of beef broth for dipping.

This Healthy Cobb Salad Recipe with Chicken is the perfect way to eat simple ingredients for lunch or dinner. Once you combine the hard-boiled eggs, sliced onion, romaine lettuce, and other healthy salad ingredients, you will enjoy this delicious keto dish. Ingredients for Classic Cobb Salad

  • Chicken breast – I prefer grilled chicken breasts, but any chicken works fine. We usually grill extra food on the weekend to enjoy during the week.
  • Hearts of romaine – I prefer using romaine lettuce, but iceberg lettuce could also work.
  • Slices of bacon – I love the texture of the added crisp bacon. You can use turkey bacon to reduce fat content if you aren’t eating keto and watching fats.
  • Colby cheese – The added cheese gives a great flavor!
  • Boiled egg – A boiled egg is perfect for adding more protein.
  • Cucumber – A small sliced cucumber adds a great crunch and refreshing flavor.
  • Grape tomatoes – Cherry tomatoes would work as well.
  • Red onion – A sweet onion is a great flavor addition.
  • Seasonings – Add incredible flavor to the salad.

Step 1. Make sure the lettuce is washed and ready to eat, then add to a bowl.

Is romaine lettuce healthier than iceberg lettuce?

Both are great for eating healthy, but romaine lettuce does have more nutrients than iceberg. However, when it comes to carbs, either is a great option. If you’d like to venture out, spring mix, Italian mix, or spinach leaves work.

Canned chicken is an option, but it’s not my favorite one. I prefer using real cooked chicken breast. Cook it in the air fryer, instant pot, or slow cooker, then dice and enjoy.

Traditional cobb salad dressing is a red wine vinegarette. However, in my family, we enjoy different dressings, so add whatever kind of salad dressing you prefer to this keto cobb salad.

If you want to keep it lighter with fresh ingredients, you could try using extra virgin olive oil, red wine vinaigrette, with a tad of sugar-free sweetener and salt and pepper to taste. Remember to use low-carb ingredients if you’re on the keto diet.

There are so many other delicious ingredients that you can add to this cobb salad recipe! My hubby loves salads with feta cheese and blue cheese crumbles.

Last weekend I attended a ladies’ conference at my church Thursday – Saturday, so I needed an easy breakfast option each morning. I knew I wouldn’t have time to make anything and wanted to make sure my breakfast was hearty and filling since I wasn’t sure when I’d be able to eat again. Keto Biscuits and Sausage Ball Puffs are two of my favorite breakfast options; but I was out of sausage. So, I decided to turn my Keto Biscuit recipe into this low-carb breakfast cheesy bacon and egg casserole.

How to Make Low Carb Breakfast Casserole Recipe Keto-Friendly

To make a breakfast casserole low-carb, a few ingredient substitutions are all you need to adjust. For the biscuit layer, substituting regular flour for coconut flour keeps it low-carb and gluten-free. Other simple swaps include heavy whipping cream instead of milk and freshly shredded cheese instead of preshredded for an easy and delicious keto-friendly breakfast casserole.

Ingredients for Cheesy, Eggy Low Carb Breakfast Casserole:

  • Coconut flour — The coconut flour in the biscuit layer helps soak up the eggy and cheesy goodness while satisfying those cravings for carbs in the morning.
  • Sour cream — Don’t skimp on the fat content here; use full-fat sour cream in this recipe. Not only does it taste better, but it will help you hit your macros for the day and stay energized.
  • Eggs — This recipe uses eggs in the biscuit layer and the bacony, cheesy layer. It helps bind it all together and gives you energy for a packed day.
  • Shredded cheddar cheese — I used sharp, grated cheddar cheese for this recipe. I find that the sharpness helps cut the heaviness of the eggs and bacon, but you can use another cheese if you prefer.
  • Bacon — Bacon and breakfast is a match made in heaven! I like to get mine crispy. Crispy bacon is also much easier to crumble up.
  • Heavy Cream – Makes the egg layer fluffy and adds rich flavor.

Instructions:

Step 1: Preheat the oven to 400 degrees Fahrenheit and grease a casserole dish with butter or cooking spray. I used a 2 1/2 qt oval baking dish.

Step 2: To make the biscuit layer, combine melted butter (I cool mine by popping the bowl in the fridge for 5 minutes), eggs, salt, and sour cream, then whisk it all together. Add the coconut flour and baking powder to the mixture and stir until combined. Finally, stir in the cheese. Press the batter into your casserole prepared casserole dish.

Step 3: Whisk eggs with 2 tablespoons of Heavy Whipping Cream and salt and pepper. Pour on top of the biscuit layer in your casserole dish.

Step 4: Bake the low-carb breakfast casserole for 15 minutes or until the eggs are cooked almost all the way through. Remove the casserole from the oven and sprinkle your grated cheese and crumbled bacon on top.

Step 5: Return the bacon and egg casserole to the oven and bake for 1-2 minutes or until the cheese melts.

Variations for this keto breakfast casserole recipe:

  • Swap out the bacon for a different protein such as sausage, ham, turkey sausage, chicken sausage
  • Veggies are great! A few suggestions include spinach, bell peppers, mushrooms, onion, etc.
  • A variety of cheese – I used shredded cheddar since I always have it on hand, but you can pick any cheese. Tons of hard cheese varieties offer great flavor while remaining low carb and ketogenic friendly.
  • Season it up! You can add your favorite seasonings like garlic powder, onion powder, paprika, parsley, or everything bagel seasoning, to name a few.

Can I substitute almond flour for coconut flour?

The general conversion is 1/4 cup of coconut flour equals 1 cup of almond flour. This ratio may be surprising, but coconut flour is much more absorbent than almond. Both flours will work well in this recipe, but you may have to play around to get the texture just right if subbing almond flour, as you may need to add fewer eggs.

How long does it last in the refrigerator?

I would say 3-5 days. Some people will eat leftovers in the fridge for up to a week, but I’m picky and have had food poisoning before.

Can I freeze this low-carb breakfast casserole?

Absolutely! It makes fantastic leftovers. After you let the casserole cool, slice and wrap each serving tightly in plastic wrap, then place in a freezer-safe storage bag or container. It should keep in the freezer up to 2 months.

This recipe is fantastic for meal prep. For mornings when you’re on the go, reheat a piece of the casserole in the microwave. It keeps very well in the freezer and will taste just as fresh as when you made it.

Since I see people asking for crunchy snacks, I always try to think of a new Keto/Low Carb snack idea. I’m not sure why I hadn’t thought about it before, but as my kids were cleaning up their lunch, I grabbed a pack of pepperoni,  mozzarella cheese, Italian seasoning, parchment paper, and a baking pan. I had Pepperoni Crisps ready for the oven in less than five minutes. Although they don’t necessarily look pretty, they were so good and crispy. They are a great keto snack to help ward off hunger that helps satisfy crunchy cravings.

How to make pepperoni chips (keto)

I’ve included a brief step-by-step tutorial below. Scroll down to the bottom of the page for the recipe card with the full recipe.

Step 1: Preheat the oven and cover the baking pan with parchment paper. Lay pepperoni slices on the parchment paper. Make sure you are using parchment paper, as many confuse wax paper with parchment paper. They will stick to wax paper. 

Step 2: Pile mozzarella cheese on top of each pepperoni, then sprinkle each with Italian seasoning.

Step 3: Bake for 9 minutes, then remove from oven to cool. As the Pepperoni Crisps cool, they will begin to crisp. You can always bake a little longer if you prefer them to be more browned. 

Tips for Making these keto pepperoni chips

These low-carb pepperoni chips are best eaten right when they’re made. While you can save them for later, they are much better fresh. 

Using parchment paper to make this keto appetizer is key because it will help make cleanup that much easier. Since you’re going to be cooking the pepperoni at high heat, there will be grease that comes out of them. Make sure not to mistake wax paper for parchment paper, as these will stick to wax paper. 

While the recipe for low-carb pepperoni chips is listed below, there are ways that you can vary the taste and flavor. Make sure to read all the tips below for the best ideas. 

Why settle for one flavor over and over when you can easily change every bite? 

If you’re worried that they’re not crispy enough when you first take them out of the oven, let them cool down. As they cool, they will crisp. If they still aren’t crispy enough, bake a little longer.

Try sprinkling a little parmesan cheese on the top right before eating them for a little more added flavor. 

Sometimes, there is a little bit of grease left on the chips. Just pat it off with a paper towel.

SHOULD I BUY PRE-SLICED PEPPERONI?

I prefer buying packages of pre-sliced pepperoni. It’s just one of those conveniences I’m not quite up to doing without. But if you are handy with a knife and feel you can slice a stick of pepperoni thin enough to make these keto pepperoni chips, go for it.

IS PEPPERONI KETO-FRIENDLY?

Yes, pepperoni is keto-friendly. However, for those who are strict keto and watch ingredients, I would suggest comparing nutritional labels to make the best choice. 

ARE THERE OTHER WAYS TO MAKE THESE KETO SNACK CHIPS?

1. Air Fryer – These keto chips can be made quickly in the air fryer or microwave. Just lay the pepperoni slices out in a single layer in the air fryer. Add the mozzarella cheese. Then cook them for four to five minutes at 380 degrees (F). You will need to let them cool a little, then add parmesan cheese if you like.

2. Microwave – To cook the keto pepperoni snack chips in the microwave, place the slices on a paper towel—Cook for 40 to 60 seconds in the microwave or just until crisp. Let them cool before transferring them to a plate.

3. Skillet – Place the pepperonis in a single layer on a hot skillet. Follow directions as baking and cook on the stop until crisp.

HOW ARE THE KETO PEPPERONI SNACKS STORED?

While I prefer to eat them while they are fresh, they can be stored in an airtight container. You can also store them in individual snack bags, making them easy to grab for an on-the-go snack. Keto Pumpkin Fluff Fat Bombs Recipe

 This easy-to-make Keto Pumpkin Mousse recipe is a must all year long! Rich and full of pumpkin spice flavor, this fluffy pumpkin keto dessert with cream cheese is delectable. 

 

Keto pumpkin desserts start getting popular every year around mid-August. Since my hubby loves anything and everything, pumpkin, I thought I’d work on a recipe for Keto Pumpkin Mousse. I knew one of his favorite keto dessert recipes is Peanut Butter Fluff, so a recipe for keto pumpkin mousse was an obvious choice.

It is optional, but I love the crunch that nuts add to a low-carb dessert recipe. It changes the texture and gives it much more depth. Although optional, adding a few pecans and sugar-free Lilly’s chocolate chips are a tasty addition to keto pumpkin cheesecake mousse.

Note: Walnuts make a great addition as well. 

Ingredients for Keto Pumpkin Mouse:

  • Heavy Whipping Cream– Heavy whipping cream is high in fat and makes for a great base when making these pumpkin fluff keto bombs. I like to use heavy cream because compared to whipping cream, it is creamier and tends to hold its shape better.
  • Cream cheese – It gives pumpkin fluff a smooth cheesecake-like consistency! What more could you want? I use Philadelphia brand full fat cream cheese as it contains fewer ingredients and carbs than other brands.
  • Pumpkin Puree– Relatively low in carbs and can be enjoyed during keto.
  • Vanilla extract – Add some more flavor with a splash of vanilla!
  • Pumpkin Pie Spice– Usually composed of a blend of ground cinnamon, nutmeg, ginger, cloves, and sometimes allspice, Pumpkin Pie Spice is incredibly flavorsome. 
  • Swerve Confectioners– A keto-friendly sweetener with zero carbs and zero calories. 
  • Unsweetened Chocolate– Look for Baker’s or dark chocolate with no sugar.
  • Optional: Pecans and Lily’s Chocolate Chips– Add some crunch to your pumpkin keto bomb with pecans and chocolate chips. With Lily’s chocolate chips you can stay in ketosis and still enjoy chocolate. These chocolate chips are low carb and sweetened with erythritol and stevia. Plus, they come in a variety of different flavors!

Steps to make Low Carb Pumpkin Mousse:

Step 1: Whip heavy whipping cream until stiff peaks form in a medium mixing bowl, then set aside.

Tip: Do not use a warm bowl or utensils, or the heavy cream may not form stiff peaks

Step 2: In a separate bowl, add cream cheese, pumpkin puree, pumpkin pie spice, vanilla, and Swerve confectioners, then mix on medium speed until smooth.

Tip: Make sure the cream cheese has been completely softened otherwise, it will be chunky, and your mousse won’t be fluffy and smooth.

Step 3: Add the pumpkin cream cheese mixture to the whipped cream and mix on medium speed until fluffy.

Step 4: Grate chocolate shavings on top.

Step 5: Optional: Add pecans and Lily’s Chocolate Chips.

Tip: Best if kept in the refrigerator overnight and served the next day.

IS PUMPKIN KETO-FRIENDLY?

Pumpkin is a winter squash that can be incorporated into various dishes and desserts! Unlike other winter squashes, Pumpkin is relatively low in carbs (4-12g of carbs per 100 g of pumpkin) and can be incorporated into a keto diet! That being said, make sure you are keeping track of your portions. Keto pumpkin mousse only uses ¼ cup of pumpkin puree spread across six servings, making it a little less than three net carbs per serving.

Keto Chili: Easy, Delicious, & Low Carb

During summer’s blistering summer, I dream about those crisp fall days. I love everything about fall, including cozy bonfires, leaves changing colors, cooler weather, and fall foods, like chili and pumpkin everything. Fall signals college football season, which makes my hubby and kiddos very happy as Ohio State Fans. Of course, I had to come up with a keto chili recipe that everyone would love.

HOW TO MAKE CHILI KETO-FRIENDLY

Unless you are from Texas and already eat chili without beans, most traditional chili recipes aren’t keto-friendly due to the high carb content of beans. But, like many recipes, it can be tweaked to make a low-carb chili that is mouthwateringly delicious. This keto chili recipe has no beans, so it is a perfect dish for my family to eat while watching my hubby’s beloved Buckeyes play football on Saturdays. It’s thick and delicious! Since my kids don’t follow a strict keto diet, I often cook beans in a separate pot on the stove. Then, when the low-carb chili is done, I can add a spoonful or two of beans to my kids’ chili.

Ingredients:

  • Ground Beef– I use 80/20 beef for this recipe, but you can use whichever kind you like. I always brown my meat before to reduce cook time.
  • Rotel Tomatoes– These spicy diced tomatoes with green chilis add the perfect amount of kick to your keto chili.
  • Crushed Tomatoes – Part of the base of this low-carb chili recipe
  • Diced O – adds a bit of heartiness and added flavor
  • Beef Broth – Adds more flavor than water.
  • Spices – Don’t
  • Red Pepper Flakes & Hot Sauce (Optional) – turn the heat up a notch if you like your chili to have a spicy kick

Steps to Making Keto Chili:

Step 1: Brown the ground beef, green peppers, onions, and garlic together first over medium-high heat in a large skillet or pan.

Tip: As I have mentioned before, I always brown my ground beef ahead of time, which reduces the cooking time, and makes cooking meals like keto chili so much easier. If you use ground beef already browned, you’ll want to saute the bell pepper, onions, and garlic cloves in a little olive oil before adding the browned ground beef to the pot.

Step 2: Drain (if desired) and return to the saucepan.

Step 3: Add all other ingredients to the ground beef mixture and bring to a boil. If you decide to add the optional butter, you would add it now. It will add a little extra fat and flavor to the chili.

Step 4: Reduce to low heat and simmer uncovered for 1 1/2 to 2 hours or until chili reaches desired thickness. If desired, top each bowl with sour cream, grated cheese, and jalapenos.

Tip: This chili recipe is so thick and hearty. If you prefer a chili that is not quite as thick, add more beef broth until it reaches the desired thickness. I typically like mine a little thinner, while my hubby prefers his nice and thick.

How to Thicken Keto Chili?

The best way to thicken this keto chili is to bring it to a boil, turn down the heat, and simmer it with the lid off. As it simmers, the liquid evaporates, thickening the chili. Make sure you stir it occasionally. Simple, right?

How Many Carbs Are in a Bowl of Chili?

This recipe makes eight servings, with seven net carbs per serving. No guilt here! I did not measure for an exact serving size. Instead, I divided the low-carb chili evenly.

If you’re looking for a great meal, do yourself a favor and make this quick, easy, low-carb, keto chili. It is incredible…savory, filling, and so delicious! Best of all, it’s easy to make. When I have an evening commitment, this is one of my hubby’s go-to’s for dinner because it’s so easy to fix, and the kids love it.

What to Eat with Low Carb Chili

What could be more perfect with a delicious bowl of chili than a chaffle? I also made my keto cheese crackers, and they paired perfectly. Another option is keto cornbread. We typically keep it simple and make a salad with it, as this low-carb chili recipe is so hearty.

How to Store Keto Chili

I love to make twice as much as the recipe calls for as it makes for an easy lunch the next day. Chili should last for three to four days in the fridge in an airtight container. You can freeze the cooked chili in freezer-safe containers or heavy-duty freezer bags for up to six months. If you freeze the chili in individual containers, you can pull one out whenever you want a delicious bowl of home-cooked keto chili.

Are Kidney Beans Keto?

As I mentioned, bean chili is loaded with carbs. A half-cup of canned dark kidney beans contains 24 carbs per serving with 5 grams of fiber, making them 19g of net carbs per serving. Half a cup of kidney beans would take up almost an entire day’s allotment of carbs for those following a keto lifestyle. Also, kidney beans are legumes, which most people avoid on the keto diet, with one exception.

What Beans Are Keto-Friendly?

Most people eating keto avoid beans because of their abundant starch and carb content. However, the exception is green beans at only 2g of net carbs per half-cup. Some people add green beans to their chili to add a little bulk to it to remind them of beans. To make keto-friendly chili, leave out the standard chili beans.

Are Tomatoes Allowed on the Keto Diet?

While tomatoes contain natural sugar, they are relatively low in carbs and high in fiber. They can be enjoyed in moderation on a low-carb diet. Keep in mind that the carbs in the tomatoes’ are spread over many servings in this recipe.

I used diced tomatoes with green chilis (or Rotel) and crushed tomatoes in this recipe. If you don’t enjoy chunks of tomatoes, you can toss a can of whole tomatoes in a blender to make tomato sauce or crushed tomatoes.

Variations to this recipe:

  • Crock-Pot Option: Most of the time, I make my chili on the stovetop, but if you prefer, you can use a slow cooker. Add your browned beef and other ingredients to the crockpot and cook on low for 4-6 hours you may want to reduce the beef broth as it won’t cook down in the crockpot like it would on the stove.
  • Bring on the Heat: If you like your chili hot, you can always add jalapeños, hot sauce, crushed red peppers, or more chili powder to this chili keto recipe.

Keto Fried Chicken Nuggets (deep fry or air fried)

Every mom knows that a good fried chicken nugget recipe is a must when you have kids at home! My Keto Fried Chicken Nuggets are so easy, delicious, and perfect for lunch or dinner! Add this to your low-carb recipe collection to keep everyone happy!

 

 

How To Make Low-Carb/Keto Chicken Nuggets

These keto nuggets are a simple and healthier way to please your entire family! They are dredged in a seasoned flour coating, then fried, making them super crispy, which is a must for chicken nuggets! I use coconut flour for the breading, so these are low-carb and 100% keto-friendly, but if you do not like coconut flour, you can surely use almond flour or crushed pork rinds, aka pork panko, to coat your chicken instead.

They also make a great addition to any appetizer tray or a healthy snack when you need more sustenance.

Note: Keto chicken nuggets are gluten-free. Check the ingredients you use in your kitchen to make sure as I know ingredients can vary between manufacturers.

Step 1: Cut the boneless skinless chicken breasts, tenders, or thighs into nugget-sized bites. I used poultry shears, which made the job much easier.

Step 2: Crack 3 eggs in a shallow bowl or dish and add heavy whipping cream. Whisk it up before allowing your chicken to soak for a few minutes.

Step 3: Seasoning makes a huge difference when making chicken nuggets keto-friendly, so don’t be shy with your spices! I add garlic powder, paprika, salt, and pepper to the coconut flour. You can add any other spices if you wish!

Step 4: Make sure that all of the chicken is coated well in the egg and heavy whipping cream mixture. This helps the coconut flour stick better.

Step 5: Dredge each chicken nugget in coconut flour and coat thoroughly. Doing this in batches is easiest. Do not overcrowd your pan.

Step 6: Using a candy thermometer, heat your coconut oil (or avocado oil) to about 335 degrees F before adding the chicken. I deep fry the chicken in four separate batches to make sure the chicken cooks evenly without absorbing too much oil. You want the exterior to be a deep golden brown.

The breading I use for these nuggets are 100% keto-approved and grain-free. You can use almond flour OR coconut flour. My daughter is very allergic to tree nuts, so we always use coconut flour! If you wish, you could also change up the ingredients of your coating by mixing in Parmesan cheese or pork panko instead.

  • 1 ½ lbs boneless skinless chicken cut into small pieces
  • 3 eggs
  • ¼ cup heavy whipping cream
  • 1 cup coconut flour
  • 1 ½ teaspoon paprika
  • 1 teaspoon garlic powder

  • ¾ teaspoon pepper
  • enough oil for frying – I used coconut oil, but you can also use lard or avocado oil.
  • Cut chicken into bite-size nuggets.

  • In a bowl, combine eggs and heavy whipping cream. Stir until combined.

  • In a shallow pan, add chicken nuggets to the egg/heavy whipping cream mixture and set aside.

  • On a large plate, add coconut flour, paprika, garlic powder, salt, and pepper. Mix with a fork to combine.
  • Individually, dredge each piece of chicken into the flour mixture.

  • In a skillet, heat about an inch of coconut oil until it reaches 335°F. I used a candy thermometer to help.

  • Drop chicken in hot oil and turn over after 3 minutes and fry on the other side. Each batch took approx 4-5 minutes to cook but could vary depending on the size of your chicken. Do not overcrowd your frying pan as it will reduce the temperature of the oil, and the breading won’t stick as well. 

  • Once each batch is done, remove from the oil, and place nuggets on top of a paper towel or frying rack to absorb excess oil, then fry the next batch until you are finished frying all your chicken.

  • Serve with homemade sugar-free, low carb bbq sauce. 
  • Optional: Sprinkle a little extra salt on top of each batch as you put it on the paper towel for added flavor.

It is finally starting to cool down here in Tennessee, and I am so excited for soups and stews. Yesterday, I couldn’t stop thinking about making soup. As I was perusing Pinterest, I found several delicious soup recipes, but none were keto-friendly.

I started thinking about how I could change up a Cheeseburger Soup recipe that I used to enjoy to be low-carb. I added riced cauliflower instead of potatoes, which was better than I expected. Usually, I’m not a huge fan of cauliflower. However, when you saute it in butter and add it to soup with a yummy ground beef/cheesy base, the flavors merge, and the result is delicious. This easy stovetop recipe makes a hearty and delicious soup. I think it tastes even better rewarmed to cover lunch for a few days.

Is Cheeseburger Soup Keto Friendly?

Traditionally, cheeseburger soup contains potatoes, four,  and Velveeta cheese. This keto-friendly version of Cheeseburger Soup has cauliflower rice and shredded cheese instead. With only two net carbs per serving, this keto version is high in fat and low in carbs.

Ingredients for Keto Bacon Cheeseburger Soup:

Ground beef – I prefer a ground beef with moderate fat, such as 80/20. The fat adds additional flavor for big cheeseburger taste. 

Onion diced/garlic cloves – onion and garlic is a must for just about every soup.

Butter – Used for the fat to saute the riced cauliflower for flavor

Riced cauliflower – adds bulk and body to the soup. I prefer riced cauliflower as it cuts down on the “strong cauliflower” flavor. I’ve found if you can saute it in butter and seasonings, it helps change the taste completely. 

Chicken broth – provides the base for this hearty soup 

Heavy whipping cream / Cream Cheese – Adds additional flavor, fat, and helps thickens the base of the soup. 

Shredded cheddar cheese – make sure to shred the cheese yourself as preshredded cheese doesn’t melt as smoothly 

basil, parsley, nutmeg, salt & pepper – don’t be afraid of seasonings! 

Step 1: `Start with a large dutch oven. Often, cauliflower is bland and mushy. Frying it in butter first adds delicious texture and flavor to this keto cheeseburger soup with cream cheese.

Step 2: Brown ground beef until it is no longer pink, then stir in the spices and other ingredients in a large pot. Simmering the ingredients together creates a depth of bold flavors. I always keep browned ground beef on hand in the freezer. This saves so much time when making any recipe for ground beef. Add the spices, broth, and heavy cream to the ground beef mixture.

Variation Tip: I used chicken broth in my recipe, but you could substitute beef broth.

Step 3: Make sure to shred the cheese yourself to avoid fillers that can make it clump instead of melting smoothly. Add a bit at a time, stirring gently between each addition.

Variations to this Recipe:

  • Sub ground chicken or ground turkey for the protein
  • Use beef broth instead of chicken broth
  • Sub larger chunks of cauliflower instead of riced cauliflower
  • Use various types of cheese
  • Add green peppers for additional flavor.
  • Use ground chicken or turkey in place of the ground beef
  • Saute other veggies with the riced cauliflower, such as carrots or celery
  • Use bacon grease instead of butter to saute the rice cauliflower

How to Thicken Low-Carb Cheeseburger Soup:

  • Simmer on low with the lid off until thickened
  • Add more cream cheese.
  • Use 1/2 tsp xanthan gum to thicken. To use xanthan gum, sprinkle it on top of the soup, then let it sit for approx 10min to thicken. It will seem like it is not working, but after a few minutes, the soup will begin to reduce. Adding too much will cause a slimy texture.
  • Remove about a cup of the soup from the pot and use an immersion blender. Then pour the mixture back into the soup.

How to Store Low-Carb Cheeseburger Soup?

Low Carb Cheeseburger Soup can be refrigerated for 3-4 days. You may need to add extra broth to the soup as it tends to thicken in the fridge. Since dairy products such as heavy whipping cream and cream cheese often break down when frozen, this soup may not freeze well.

Serve in a large bowl and garnish with cheese, bacon, or another favorite topping.

This soup is so delicious! My family loved it, and it made me one happy mamma to know my family enjoyed such a healthy meal. Plus, it was easy to clean up, leaving more time to spend with my family, which is always a bonus!

  • 1 lb ground beef
  • 1/2 of a small onion diced
  • 2 garlic cloves minced
  • 3 Tablespoons butter
  • 1 12 oz frozen riced cauliflower
  • 3 cups chicken broth
  • 1 1/4 cups heavy whipping cream
  • 3 cups shredded cheddar cheese freshly shredded (not prepackaged)
  • 3 oz Philadelphia Cream Cheese, softened
  • 1 tsp basil
  • 1 tsp parsley

  • 1/2 tsp nutmeg
  • Cook riced cauliflower in the microwave according to package directions.

  • Brown ground beef drain and set aside. (I brown mine in advance and freeze it in 1 lb portions.)

  • In a large saucepan, saute onion and minced garlic in one tablespoon of butter until translucent.

  • Add the other 2 tablespoons of butter and the riced cauliflower to the onion/garlic mixture and saute for 5 minutes, stirring so that it doesn’t stick.

  • Add ground beef, chicken broth, heavy whipping cream, and spices.

  • Bring soup mixture to a boil, reduce heat to low, and simmer for 20 minutes.

  • Add cheddar cheese a cup at a time, stirring with a whisk so that it melts evenly.

  • Once the cheese is melted, add the softened cream cheese, so the soup thickens.

  • I used an immersion blender in about 1 cup of soup to thicken it further. Simmer for 5 minutes to allow the soup to thicken.

  • Serve!

How to Make a Keto Chaffle

The basic chaffle recipe starts with a small bowl, shredded cheese, and an egg. Sounds simple enough, right?

I used a whisk to mix the cheese and egg as the waffle maker heated up. It heated up very quickly.

Tip: Sprinkle a little shredded cheese on the waffle maker before pouring the batter, then a little more on top for added crispness.

 

Tip: This recipe makes two chaffles. Make sure to divide the batter; otherwise, the batter will go all over when you close the lid.

 

It takes about 4 minutes for the chaffle to reach a golden brown color. Once itne, it should be easy to remove from the waffle maker. You can see the yummy cheese oozing out and crisp edges.

Growing up, my parents made homemade BBQ sauce all the time. I can even remember my Daddy standing over a hot pot of BBQ sauce, tasting it by the spoonful until it was just right. Traditionally, BBQ sauce has a high carb count due to sugary ingredients. While I had found some keto-friendly store-bought options, nothing compared to my Daddy’s homemade recipe. So, I decided to use his recipe and make a keto version! After experimenting, I found the perfect combination of low-carb ingredients to make the best sugar-free bbq sauce recipe.

This keto BBQ sauce is easy to make with only six main ingredients! It is versatile and can go on any of your favorite meats, be used as a dipping sauce, or even go in some low-carb casseroles!

Is BBQ Sauce Sugar-Free?

No, traditionally, bbq sauce contains ketchup, brown sugar, and high fructose corn syrup, which has tons of sugar. With around 15 carbs per two tablespoons, it is not keto-friendly.

Will BBQ Sauce Kick You Out of Ketosis?

Since regular BBQ sauce contains so many sugary ingredients, it would not take much to kick you out of ketosis. However, you do not have to miss this sugar-free keto bbq sauce recipe!

Ingredients: 

Tomato Sauce – This tomato sauce creates the base for sugar-free barbecue sauce without adding a lot of sugar.
Mustard – Helps tone down the tomato taste.
Vinegar – Gives that famous delicious tang to this sugar-free bbq sauce recipe.
Water – Adds extra liquid so the sauce can be simmered and reduced, intensifying all the flavors.
Lakanto Monkfruit Golden – A sugar-free sweetener that makes this keto bbq sauce low in carbs.

As I had mentioned before, regular BBQ Sauce is loaded with sugar. When making a keto-friendly version, an excellent sugar-free substitute is an essential ingredient. In creating this recipe, Lakanto Monkfruit Golden Sweetener yielded the best results. It is a fabulous brown sugar substitute that works perfectly in keto recipes. An alternative sweetener is Swerve Brown. Lakanto Monkfruit Golden and Swerve Brown measure the same and are interchangeable.

How to Make Homemade Sugar-Free BBQ Sauce

Step One: Add tomato sauce and mustard to a saucepan and use a whisk to stir vigorously to ensure the ingredients are thoroughly combined. Don’t skip the whisking. You want to make sure your low-carb sauce will be smooth!

Tip: The canned tomato sauce is located in the canned food aisle, usually with several varieties of canned tomatoes, such as diced, whole, tomato paste, etc. With all the tomatoes next to each other, it is easy to grab the wrong kind, so you may want to double-check before checking out!

Step 2: Dump the spices, water, vinegar, and Monkfruit Golden into the mixture and stir together. Turn on medium-high heat to bring it to a boil. 

Step 3: Once the sauce comes to a boil, reduce it to a simmer on medium heat. While simmering, the sauce will begin to reduce and thicken and infuse with flavor. Leave on the stove until it has reached the desired thickness. Serve and Enjoy!

Tip: If you feel like the bbq sauce is too thin, don’t take it off the stove yet. All you have to do is keep simmering with the lid oof the pot and it will thicken perfectly.

Variations to Low Carb BBQ Sauce:

While I used regular white vinegar in this recipe, you could substitute it with apple cider vinegar. Additional ingredients that can be added to this recipe for sugar-free bbq sauce include liquid smoke, Worcestershire sauce, smoked paprika, onion powder, and chopped onions. 

In addition, if you want to make spicy sugar-free bbq sauce add cayenne pepper and a dash of your favorite ket-friendly hot sauce!

How to Thicken Homemade Sugar-Free BBQ Sauce:

To thicken, all you have to do is let it cook down and simmer for a bit; this does not take too long but is incredibly important as it allows the flavors to infuse together. If you are in a time crunch or the sauce is not thickening, you can turn up the stove (make sure to watch it carefully so it doesn’t boil over or stick), or add about 1/4 tsp of xanthan gum. You have to be careful not to use too much xanthan gum as it can make the texture slimy if you use too much. I prefer boiling it down on the stove instead.

Can I Make This Recipe in a Slow Cooker?

I don’t think it would work, as sauces don’t typically cook down and reduce in a slow cooker. You need to boil the sauce down without a lid on it for it to thicken properly. 

Is this BBQ Sauce Gluten-Free?

All of the ingredients used to make this sugar-free bbq sauce are gluten-free. Although, I would suggest checking the labels on the brands you use.

Braggs Aminos is a healthier version of soy sauce that is naturally gluten-free and does not contain wheat, additives, or preservatives.

How Many Carbs are in Sugar-Free BBQ Sauce?

This recipe only has one carb per serving of two tablespoons, making it the perfect keto sauce option! Having tomato sauce replace ketchup and a keto-friendly sweetener instead of brown sugar dramatically reduces the number of carbs!

How to store this recipe?

I store it in the refrigerator for up to two weeks. I’ve saved empty ketchup bottles or mason jars to store the bbq sauce. The keto-friendly sweetener can crystallize when refrigerated, but once you heat the sauce, it will be nice and smooth again.

You can also place the sauce in an airtight container and freeze it for up to 3 months if you wish!

To reheat low carb bbq sauce, you can either warm it up in a glass container in the microwave at 30-second intervals stirring between each one or add it to a saucepan on low and heat until the desired temperature. Let it defrost in the fridge overnight before reheating for best results.
